Proof Brewery: Hidden Gem in Tallahassee
I went to go visit my sister in Tallahassee, FL for a Florida State University football game. Tailgating is one of my favorite things to do and we had a great spot right next to Doak Campbell Stadium. Our seats were in the ‘Champion’s Club‘ which were pricey tickets but the only place that serves alcohol and (good) food in the stadium. If your budget allows, great place to see the game!

Tallahassee has an interesting populace because it is home to 3 colleges/universities as well as Florida’s State Capitol. This forces governments officials to live side-by-side with college students. Essentially, restaurants and bars have to choose a side on who their clientele will be and what kind of drinks/food they will serve to attract the right crowd. We ate at Momo’s Pizza and Brewpub which attracts students and politicians alike with their craft brews and pizza slices ‘as big as your head’. Yes, that’s their tagline. They also have a nice beer garden area with live music on Wednesdays.
The two other unique restaurants I’ve tried are the Edison and the Midtown Caboose. Edison is located in beautiful Cascades Park and it took over Tallahassee’s old electric building constructed in the 1920’s. Really cool exposed brick and wood, with high ceilings and big windows with great natural lighting. They also have a nice outdoor patio area overlooking the park. The renovation gives it a modern feel with keeping the building’s historic attributes. Edison serves hand-crafted cocktails and ‘foodie’ food. Midtown Caboose is more of a sports bar atmosphere. Also, has outdoor seating and serves good burgers, sandwiches and wings.
Proof Brewing Company
Proof Brewing Company was awesome! I had no idea what to expect going in, but they had some of my favorite beers I’ve had in Florida and a really awesome atmosphere. The indoor bar area was pretty small with 2 TV’s and a couple of tables. They had 8 of their own beers on tap and then also featured a couple other local FL beers as well (including Bold City Brewery from Jacksonville).
The outdoor beer garden was my favorite part (besides the beer). It showcased 3 sets of cornhole boards, a ping pong table, bocce ball court, gigantic connect 4, and even a grill cooking up bratwursts. We were there at night, so the whole outside area was illuminated by rope lights, but it would be an awesome spot during the day too!
My favorite beer was their La La Land IPA. For a west coast style IPA, it wasn’t as hoppy as I expected and really smooth almost like it was on nitro. My other favorite was their Creatures in the Dark Chocolate Stout, which was sweet with hints of coffee. The other beer I thought was unique was their Thai Chili Mango Wit. I’m not big into these kind of beers, but sampled it and thought it was pretty decent. I also tried the Ghost Totem Porter and their Double IPA, Warpath. Both are pretty ordinary and wouldn’t be my first choice when I go back. Lastly, their Lager was OUT! Thought that was a bit odd, but everyone must like it. Proof Brewing Company is now my favorite spot in Tallahassee with great beers, activities and atmosphere. My only critique is that it should add some kind of additional food component, but an absolute must-do when in Tallahassee. Thanks for the great time, Munchkin!
